You can always tell (even without checking the name) if Melissa posts a recipe or Sylvia posts a recipe. Melissa's will never have the pretty, step-by-step posts, because her son is an animal and makes it virtually impossible to do while she prepares his food in a "never fast enough for him" manner.
Nevertheless, I do promise that mine (Melissa's) will be equally as delicious even though the posts will not be as visually stimulating!
I first made this for Kane when his little friend, Adam, was coming over and both really enjoyed them. Adam's mom took the recipe also and I'm sure she will also endorse how easy these were to make!
You can make 9 large ones if you use a regular muffin tin and about 18 in a mini muffin tin.
3 large eggs
1 cup cooked quinoa
1 cup shredded mozzarella
1/3 cup turkey pepperoni cut up into small pieces (regular pepperoni, ground meat, etc would work just fine too)
1/4 tsp salt
Preheat the oven to 350 degrees and spray pans with the spray of your choice. I just mist with olive oil. Combine all the ingredients and fill muffin tins. Bake for 25-30 minutes or until browned. Cool and serve with tomato sauce for dipping.
These store and reheat really well too! I've also snuck in grated carrots, diced zucchini, and chopped broccoli florets.
