Vanilla Chia Pudding Parfaits


Today's theme has been health and fitness. This has a lot to with panic! Summer is upon us and I'd really like to feel good as I spend my days at our building's pool with my son...as opposed to how I felt last year.

I typically maintain a healthy diet and cook pretty health-consciously when I'm in charge of mealtime, but now I'm on overdrive! (Again, it's panic!)

I LOVE chia pudding! I was so mad at myself for spending so much money on it when I realized how ridiculously easy it is to make it at home! I had purchased a couple of Chia Pods at the grocery store and my son loved them too. I decided to not only make some vanilla chia pudding, but to turn it into a parfait for the whole family to enjoy a healthy breakfast.

Ingredients:

1 cup almond milk

1 cup plain Greek yogurt

1 Tbsp raw honey OR pure maple syrup

1 tsp pure vanilla extract

pinch of sea salt

1/4 cup chia seeds ( I recommend a big bag from Trader Joe's....super cheap and I also sprinkle them on my salads!)

Combine all of the ingredients in a bowl and mix well. Cover in the refrigerator overnight.

The next morning, it's ready to go and has a pudding/yogurt consistency.

I layered mine with muesli (granola will work also), fresh blueberries (Kane's favorite!), and shredded coconut (my favorite!), but you can get creative with your toppings or have none and enjoy the delicious vanilla pudding on its own!

**Note....This makes two adult servings, so I recommend doubling it because you will LOVE it!
