We love tacos in this house! Well, I mean, doesn't everyone love tacos? My husband is obsessed with wings, so I thought I'd mix them together and the result was DELICIOUS!
Super easy, fast, and mostly healthy...I present to you, Buffalo Chicken Tacos!
2 skinless, boneless chicken breasts
Ground black pepper
2 Tbsp Frank's hot sauce
1 tsp unsalted butter or ghee, melted
1/2 tsp ground cayenne pepper
2 Tbsp buttermilk (I combined milk and vinegar instead....see below for more information) 2 Tbsp mayonnaise (I use a vegan organic option, but any will do!)
1 oz crumbled bleu cheese (about 1/4 cup)
2 cups shredded romaine lettuce
1 celery stalk, chopped
Tortillas of Choice
I grilled the chicken after salting and peppering it. You can do this on the stove in a pan or in the oven if you don't have a grill. Once cooked, slice or chop. Combine hot sauce, butter and cayenne pepper and toss chicken in sauce.
Combine buttermilk (1 Tbsp of lemon juice or white vinegar added to milk in a liquid measuring cup until it equals one cup left sitting for 5 minutes is a great substitute), mayonnaise, and crumbled cheese in a bowl and mash with a fork.
Toss lettuce and celery in mixture.
Warm tortillas. Top with chicken and lettuce mixture and enjoy! We had ours with some saffron and cilantro rice and of course, a margarita!

We use a lime flavored salt I randomly found in Home Goods, but any salt will do!
1 1/2 oz Tequila (our faves are Herradura and Casamigos)
1 oz fresh lime juice
1 1/2 tsp agave nectar (way better than that crappy sour mix!)
1 1/2 tsp Grand Marnier or Cointreau (splurge and skip the triple sec!)
1 lime wedge
This makes one, so adjust accordingly and enjoy!
