When I met my husband, I was a great cook and thoroughly enjoyed cooking, baking, and creating all kinds of delicious meals. I was one of those people who registered for all of those kitchen things, but actually did use them!
Once I got pregnant, I was very sick and developed an aversion to handling, preparing or cooking most items. Tim wound up taking over the cooking and honestly, I just let him continue that task to date. Once in a blue moon I’ll get the idea to cook but feel stumped or overwhelmed with meal planning and just make the same old thing over and over.
We used to do meal kit services and had stopped (not sure why) which had always inspired me and helped me feel less overwhelmed. Working full-time, plus the blog, plus raising a little one leaves me stressed, tired, and quite frankly, completely disorganized most of the time in my day-to-day life! I decided that I needed to return to a meal kit service and set out on a quest to find the perfect one for my family.
My husband is a picky eater—no fish, no seafood, and not super adventurous. We also try to eat healthy when we are cooking.
**Fun fact—We used to be strict Paleo eaters and strayed disastrously once I got pregnant with Kane, but have been discussing returning to our previous lifestyle.
I was drawn to Sun Basket because they use all organic, non-GMO, and sustainable ingredients for their recipes and also offer different options such as Gluten-Free, Paleo, and Vegetarian.
I was greeted by a box created from recycled cardboard with packaging made from recycled PET bottles and special labels for rolling them up to easily recycle them once I was done unpacking. The ice packs are biodegradable and recyclable and are made from 98% water and 2% Non-GMO cotton. Each meal is packed in a labeled bag that contains everything you need to create the recipe with proteins packed separately under additional ice packs.
I went for the standard 3 meals per week for 2 people. Tim is picky, so I had to work with those options. I chose a Steak Tacos with Zucchini-Scallion Salsa and Lime Yogurt, Chicken Chile Verde with Jicama Salad, and one of the vegetarian options, Warm Quinoa and Corn Salad with Summer Squash, Ricotta, and Mint (adding chicken to his).
My favorite part of this box was that there was a full recipe book on top which had not only my three meals, but everything they were offering that week including some recipes for a breakfast smoothie, a frittata, and a bonus dessert! Sometimes it's hard to just pick three, so I liked that I got recipes to make 13 things!
First, we went for the Steak Tacos. This one was listed as a Customer Favorite, Soy Free, and Low Calorie. They give you calorie counts and timing which said 25-35 minutes and we felt was very accurate. The flavors were great and certainly different than most tacos we eat with salsa, guacamole, cheese, sour cream, etc. These had a fresh and healthy zucchini-scallion salsa with lime yogurt and they were delicious! We felt satisfied and still like we had eaten healthy. We had zero leftovers on this one....no surprise there!
Next up, we teamed up to prepare the Chicken Chile Verde. This one was listed as Paleo, Gluten-Free, Lean and Clean, Dairy-Free, and Soy-Free. It said it was 30-40 minutes and I feel like we were on the lower end of that timeframe. The flavors were fantastic! Jicama is something I rarely use, so it was nice to cook with that as well as tomatillos and chiles. It had a very low hint of spice which you can alter based on how much pepper you wanted to add. Mostly it was just flavorful and filling. I went for seconds which I rarely ever do and we did have leftovers for Tim to take to work the following day for lunch.
